I believe good health is the most important thing in life - because it gives you freedom. Freedom to pursue your dreams and do all the things that poor health won't permit. Any significant health problem, chronic or acute, will bring your life balance out of order. Not just your own bodily balance but everything and anybody you normally interact with will be affected. Many of your relationships and activities will suffer in some way.

I think anybody who seriously tried living healthier through a better diet, proper physical activity, adequate rest, and by addressing mental and spiritual factors have experienced a vast range of natural health benefits. Common benefits are overall better health and a sense of well being, better sleep, improved physical endurance and strength, sharper mental abilities and lower sleep requirements.

What constitutes a healthy diet?

Unfortunately, there are more opinions about this than there are health experts. To further complicate the matter, dietary concepts change over time, leaving most people confused and uncertain about what or whom to trust. Along with personal experimentation, such approach will enable you to establish proper eating habits that work especially well for your body. This takes time and energy, but considering the long lasting benefits a healthy diet can provide, the effort is more then well worth it. For 99.9% of human existence, our species lived on foods that were either raw or minimally processed. The technology needed to increase food processing did not exist until very recently. It is therefore reasonable to assume that our bodies are best adapted at utilizing and dealing with the raw or minimally processed foods which sustained us, and our predecessors, for millions of years: fruits, vegetables, meats, nuts and seeds. A good diet is based on natural, whole or minimally processed foods.

A large portion of it should consist of foods that can be eaten raw, such as fruits and vegetables. Fermented or cultured, unpasteurized foods such as kefir, yogurt, cheeses, miso, sauerkraut and pickles are considered highly beneficial in many cultures. Cooking should be minimal and only applied to foods that must be cooked in order to be edible. Ancestral heritage also plays an important role as certain foods may need to be excluded or emphasized. Maintaining healthy routined diet can make enormous improvements to ones health, it's only one essential part of healthy living. The other parts are proper and adeqaute physical activity, mental and spiritual well being, and adequate rest. All need to be addressed in order to achieve better health. An important thing I learned while experimenting with diets and other health related approaches is to always pay attention to the signals from the body. It's essential to do this - in order to maintain good health - and adjust accordingly. As one gets better at reading the body, it becomes natural to self diagnose a lot of minor problems (which can become major if not paid attention to) and remedy them by simply adjusting the diet or other aspects of life. Finally, we are all different - what works for one person may not work for another - thus it's important to learn about and experiment with nutrition to find out what works and what does not.

Simple Dinner Sets Go A Long Way

The time has come when Christmas is only just around the corner and you still have to go shopping to buy presents, decorations, food, Christmas tree etc. You begin to panic as you have realised that you have to buy a completely new range of dinner sets as your old sets have chipped, washed out or cracked. On the other hand, maybe this is your first Christmas dinner to cook for the family and friends, and you have no dishware to serve your dinner.

This year I have noticed a new trend in simple dinner sets and fine crockery for special occasions. People prefer to purchase simple earthenware designs that match well with plain shades of place mats, napkin with a simple napkin ring and long tinted glasses. Putting a simple spread out for Christmas can be more effective than spending huge amounts of money on expensive dishware and tablecloths that will only be used once or twice in a year.

Dinner sets are something that have been around for more than a century, but have not always been a fashion accessory at the dinner table. Having the right set for a special occasion appears to be an essential part of the preparation process for a big meal such as Christmas. It is not enough now to view dishware as just a tool to eat food from; the design of the plate plays an important part in displaying the appeal of the food and its presentation. It is more common now to serve food on plain white plates than it was during the 1980s whereby flower patterned plates were more popular.

History

Historically dinner sets were made from wood, metals, pewter and even animal skulls. Modern dishware is made from stoneware, earthenware, porcelain, glass and melamine resin. The Chinese had discovered the process of making porcelain around 600AD and had begun trading porcelain objects with the European during the 1300s. Owning porcelain made plates was a must-have for the Europeans. It was not until 1708 that a German potter in Meissen discovered the Chinese porcelain making process, beginning a new range of great European potteries.

Some of the most popular and best-known potters were also founded during this period. Famous brands such as Royal Saxon, Wedgewood, Royal Copenhagen and Spode. The practise of collecting souvenir plates was not popularised until 1800s by Patrick Palmer-Thomas, a Dutch-English nobleman who impressed Victorian audiences with his public displays of plates. The first collectible items 'Behind the Frozen Window', was credited to the Danish namely Bing and Grondahl. Christmas designed plates were then produced by many of the European countries particularly that of Royal Copenhagen and the Rosenthal series in 1910. It was not long before the European designs were introduced to the U.S with sales going up in souvenir shops, department stores and gift shops.

Plates are still used as a collectible item, mainly for older generations rather than the younger culture. Some popular collectibles are usually from abroad with intricate paintings of the countries national customs captured onto the dish. With different shapes and thickness available, dishwares are an important element in keeping up a good appearance of one's efforts on producing a good spread and the most popular designs are simple with a few small accessories to jazz it up.

Ginger - Much More Than Just a Spice

Dried or raw, baked or cooked, powdered or crystallized, ginger has made its way to almost every world's cuisine. Widely appreciated for its medicinal and culinary value, the aromatic spice is the essence of many Oriental dishes - Chinese and Indian in particular.

Health Benefits of Ginger
Ginger has been known for its numerous health-enhancing properties for thousands of years. It is a popular cough and cold treatment, especially effective when consumed in a tea form or as juice mixed with honey. Thank to its anti-inflammatory quality, ginger is also good in treating arthritis-related pain, and easing muscular aches and migraines. Women throughout Asia use ginger in food and drinks to relieve menstrual cramps; ginger tea is believed to stimulate uterus contractions and is advised to be taken after childbirth to make the womb shrink faster. Chicken with Mango and Ginger
Ingredients:
� cup olive or vegetable oil
2 cloves fresh garlic, crushed
2 pounds chicken breast fillets, skinned
1 cup peeled and diced mangoes
� cup dark brown sugar
� tsp freshly ground cloves
2 tsp ground ginger
� tsp nutmeg
1 tsp soy sauce
Salt and freshly ground pepper to taste
In a heavy frying pan heat the oil, add the garlic and saut� for a few minutes. Add the chicken fillets and cook for 15-20 minutes until the chicken is cooked through. Meanwhile, blend the mango with the sugar, cloves, ginger, and nutmeg. Pour the mixture over the cooked fillets to evenly cover all the pieces. Add soy sauce, salt, and pepper to taste. Cook 10 more minutes. Serve hot with a rice side dish and/or green vegetable.

Hot Ginger Coffee
Ingredients:
6 tbsp ground coffee
1 tbsp orange peel, grated
1 tbsp ready-made crystallized or candied ginger (available in grocery stores)
� tsp cinnamon, ground
6 cups cold water
Fat free whipped cream, cinnamon sticks - to taste (optional)
Brew the coffee, orange peel, ginger and cinnamon together as usual. Pour into mugs and garnish with whipped cream and cinnamon sticks.

Ginger Thirst-Quencher
Ingredients:
One-inch piece ginger, grated
1 glass chilled/hot water
2 tsp organic jaggery
A few mint leaves
� tsp powdered cumin seeds
� lime
Salt to taste
Mix water, jaggery, cumin seeds and salt. Add the mint leaves and ginger, and squeeze the lime.

Warning:
Though generally safe, ginger in excessive amounts can cause mild heartburn. Pregnant women should consume ginger with caution and avoid after the first trimester. Ginger can interfere with certain medicines or be contraindicated in some conditions.

Easter - A Time for Family, Love and The Traditional "Easter Lamb Cake"

Easter holds such beautiful memories from my childhood. Every year we would drive "over the river and through the woods" to my grandmother's house. There was a feeling of excitement in the anticipation of the traditional Easter Egg Hunt. With eleven grandchildren that was a lot of Easter eggs! As much as grandmom was an expert in the kitchen, Grandpop von Hohen was a expert Easter egg hider! He got such a kick out of it! There was always "one more egg" which no one could find. It would usually turn up in a basket grandpop had tied to the ropes of the flagpole and hoisted to the top of the pole! We'd all laugh when the older cousins would finally discover its location and try to get it down.

This special holiday comes at a most wonderful time of year - spring time! Adding to the fun and festive atmosphere of the day was the beauty of my grandmother's gardens. There were bulbs galore! All different varieties and colors of daffodils, tulips and narcissus. There was also a lovely backdrop of the forsythia hedge. Oh, and who could forget those fuzzy pussy willows! We'd be running around the yard in our Easter bonnets and it felt more like we were in the middle of a fairytale. The beauty around us seemed almost magical.

The beauty of the outside graced the inside of grandmom and grandpop's cozy home with colorful floral arrangements scattered throughout the dining and living rooms. But what always graced the center of the Easter Sunday Dinner table? It was the traditional Easter Lamb Cake. This was a pound cake baked in a lamb shaped mold and covered with white frosting and coconut with jelly beans for the eyes, nose and mouth. The silver tray it rested on was beautifully decorated with paper doilies, green Easter grass and sprinkled with colorful hard boiled eggs and all types of Easter candy - jelly beans, chocolate butter creams and coconut nests are the ones I remember most.

Best Pound Cake

Take 2/3 cup sweet butter and 1� cups sugar and mix together until creamy. Add � teaspoon lemon rind, 1 teaspoon vanilla, pinch of mace or nutmeg and 1 jigger (equals 1 shot) of rum. Sift 2 cups flour, � teaspoon salt and � teaspoon baking powder. Blend with butter and sugar mixture with 2/3 cup milk. When blended add 3 eggs, one at a time, beating each one in well. If preferred add � cup nuts or currants. Pour into a buttered and floured lamb shaped mold and bake at 325 degrees for 1 hour and 15 minutes.

Fluffy White Frosting

  • 1 cup sugar
  • � teaspoon cream of tartar
  • 2 egg whites
  • 1 teaspoon vanilla

Combine sugar, cream of tartar, 1/3 cup water and a dash salt in a saucepan. Cook and stir until bubbly and sugar dissolves. In a large bowl combine egg whites and vanilla. Add sugar syrup very slowly to unbeaten egg whites while beating constantly at high speed about 7 minutes or until stiff peaks form. When cool, frost the cake and sprinkle with coconut. Make eyes, nose and mouth with appropriate colored jelly beans.
